Crispy Jacket Potatoes


I absolutely love jacket potatoes but I've had some really, really bad ones in my time. I don't udnerstand how you can get it so wrong, but I guess you can. This is my recipe for the crispiest on the outside, fluffiest on the inside jacket potatoes you ever did see (and eat). Preheat oven to 190C, coat potatoes in a little olive oil and freshly milled salt and black pepper, place on a baking tray on the bottom shelf for an hour or just over (up to 90 mins) depending on the size of them, and when cooked they should be crispy as you like when you cut through, but so soft in the middle. Mash in loads of butter, and just lose yourself in them. Delish. Great made with russet or baking potatoes. I used Tesco Finest all rounders. Absolutely delicious.
