One Tray Chicken and Chickpea Curry


One Tray Chicken and Chickpea Curry you say? Yes, that's right and I've merged two of my easiest and most popular dishes all into one; my One Tray Chicken and Chickpea Curry / Daal, and it pretty much cooks itself. I have been told many times, by many of you, how much you love these dishes, and how easy they are to make so I’d love for you l to give this combined one a go. My kitchen smells incredible. Dinner is served. 

4 large chicken legs/8 thighs in an oven dish, drizzle with olive oil, salt, pepper and put in preheated oven, top shelf for 15-20 mins at 200C. Meanwhile, mix 1 tsp each garlic and onion granules, turmeric, 1 heaped tsp garam masala, 1/2 tsp each ground ginger, black pepper, and ground coriander. Make up 900ml chicken stock, add spices to the stock, stir, take out tray, add 6 tbsp red lentils, 6tbsp easy cook rice and 1 can chickpeas to tray, pour over stock and cook on bottom shelf for 40-45 mins until stock has evaporated and chicken is cooked. Take out of oven and mix in a handful of spinach leaves until wilted. Happily devour. Perfect family comfort food.
