Kıymalı Çökertme Kebabı
Super simple cheats’ version of such a humbling and delicious dish. You can use my #melizcookschips recipe (on YouTube vid) but just cut the chips up a little thinner (the shoestring chips in this dish are traditionally fried), but you can also use frozen oven French fries.

800g Meliz Cooks Crunchy Baked Chips / frozen French fries
For the Garlic Yoghurt:
150 natural yoghurt
1 tsp grated garlic
Pinch of sea salt flakes
For the Spiced Mince:
3 tbsp olive oil
500g beef / lamb / veggie mince
2 tsp tatlı biber salçası (Turkish sweet red pepper paste)
1 tsp grated garlic
1 tsp pul biber
1 tap parika
½ tsp sea salt flakes
½ tsp coarse black pepper
For the Salad:
4 baby cucumbers, thinly sliced on the diagonal
1 large red onion, halved and finely sliced
25g fresh parsley, finely chopped
Juice of ½ a lemon
½ tsp sumac
For the Chilli Tomato Sauce:
1 tbsp olive oil
1 tbsp tomato puree
1 tsp pul biber / chilli flakes
200g chopped tomatoes, blitzed in a food processor but still with texture
Pinch of coarse black pepper
To garnish: fresh flat leaf parsley (finely chopped), chilli flakes, sumac, lemon wedges
Method:
Cook chips as per instructions. Mix together all the ingredients for the garlic yoghurt and side.
For the mince, add olive oil to a pan on high heat, once hot, add mince, breaking it up, but don't stir - let mince crisp up before stirring. Once mince is browned/ crispy, add Turkish sweet red pepper paste, garlic, pul biber, paprika, coarse black pepper, sea salt, stir well and remove to a plate covered with foil - wrap tightly.
Make chilli tomato sauce in same pan you used for mince - add the oil to the pan (medium heat), once hot, add tomato puree, breaking it up with back of the spoon. Stir through pul biber, chopped tomatoes, sea salt, stir well, turn up heat, bring to boil, stir and take off heat.
To assemble: Place the fries on a large platter or plate, then the garlic yoghurt, followed by the spiced mince, then the tomato sauce, and garnish with fresh parsley, pul biber and serve with salad, or alternatively, load everything into flatbreads.
