Pan Fried Salmon & Börülce Salatası (Black Eyed Bean Salad).

Another night, another platter.  Tonight it was a simple pan-fried salmon (in just a little olive oil), and Börülce Salatası, made with a base just like my mum’s (which I’ve posted on my blog), which consists of fried onions and garlic. This is what I made for the NHS staff at Royal London Hospital on Wednesday, but I didn’t have any potatoes today, so I added spinach instead. I sautéed the courgette and garlic in the same pan onions once the onions were softened when caramelised (15-20 mins on a low heat), then wilted down the spinach then added the cooked black eyed beans? Recipe

For the Black Eyed Beans 

300g dried black eyed beans
1 large / 2 small onions 
4 cloves garlic 
3 tbsp olive oil 
1 large courgette, halved lengthways then sliced into 1cm pieces
200g baby spinach (stems cut off, roughly chopped) / 200g baby spinach /spinach 

For the dressing

4 tbsp extra virgin olive oil
3 tbsp lemon juice 
1 tsp sea salt flakes / 1/2 tsp 
1 tsp dried mint
1 red onion, finely sliced 
1 tsp summak 
1 tsp pul biber
2 tbsp finely chopped parsley

For the salmon 

4 salmon fillets, seasons with a little salt
Juice of 1/2 lemon, 1/2 tbsp  finely chopped parsley and a punch of coarse blank peppercorns to serve. 

Method 

Check black eyed beans and get rid of any dud ones. 

Wash them then add to a large pan with 2 1/2 litres cold water and a good squeeze of lemon juice. Bring up to the boil and simmer for around 45 minutes - check they’re tender but not overly mushy. 

In a frying pan, heat up 3 tbsp olive oil and soften onion on a low heat for at least 10-12 mins until fully softened. Once they‘re softened, turn heat up a little, add courgette and garlic, soften for a few m of mins more then add spinach and cook until wilted. 

Add the drained black eyed beans to the pan, stir until coated in greens and oily onions, then transfer to serving dish. 

Drizzle over all the dressing ingredients, stir well and serve with an extra drizzle of EVOO. 

So delicious. 

Pan Fried Salmon 

For the pan fried salmon, heat up 1 tbsp olive oil in a frying pan on medium-high heat. Add the salmon flesh side down and cook for 4-5 mins until browned and crispy, flip over onto the skin side and cook for another 4-5 mins or so until cooked through but still a little seasons inside. Brush with lemon juice, finely chopped parsley and coarse black peppercorns to serve.
