And the first recipe from the new Meliz's Kitchen is....Lemony Lamb Chops, Coriander & Tomato Salad and Roasties. Perfect for the Summer. The recipe I present below is for 2, so double up the quantities for 4.

Lemony Lamb Chops

Recipe: Serves 2-4

4-6 lamb chops depending on size
1 whole lemon cut into thin slices
4 big garlic cloves cut in half
1 teaspoon oregano
Pinch of salt
1/2 teaspoon black pepper

Method

Lay the chops in a dish/baking tray and lay over the lemons, garlic, oregano and seasoning. Cover with clingfilm and put in the fridge until you are ready to roast.


When you are ready to cook them, preheat the oven to 220 degrees C (425 F, Gas Mark 7), take the tray out of the fridge 10 mins before cooking and remove the clingfilm. Place the tray straight into the oven as it is, with the lemons, garlic and seasoning, and oven roast for 15 mins (turning half way through) for medium, and 25 minutes for well-done.

Serve with the Coriander and Tomato Salad...and Roasties


Coriander and Tomato Salad

Recipe: Serves 2-4

Big bunch coriander, finely chopped.
4 large tomatoes, chopped into small cubes
1 large green bell pepper, finely chopped
4 spring onions thinly sliced
5 tablespoons Olive Oil (doesn't have to be extra virgin)
Juice of 1-2 lemons
3 Tablespoons Pomegranate nectar (optional, will discuss later)
Pinch of salt

Method


Put all of the salad vegetables and coriander into a bowl.

Pour over the oil, lemon juice, pomegranate nectar (you can get this from all good Turkish delis - pic below - but if you can't find it, use 3 tablespoons of white wine vinegar instead), season with the salt, stir and serve.


Pour the dressing juices and coriander over the chops to almost serve as a salsa verde like sauce.


Roasties

Recipe: Serves 2

6-8 Balfour potatoes cut into quarters (I use balfour as they're really creamy and cook quickly)
Drizzle of olive oil
1/2 teaspoon oregano
Pinch of salt
1/4 teaspoon black pepper

Method

Preheat the oven to 200 degrees C.


Place the chopped potatoes into a baking tray, drizzle with the oil, sprinkle over the oregano and seasoning and stir.

Place the tray into the oven and cook for about 20-25 mins until golden brown, stirring halfway through.
