Salmon, Chickpea and Veg Parcels

 So, this may be the easiest recipe I have ever created and posted. If the prep takes you longer than 3 minutes then you're doing something wrong! This one is totally sugar-free, as most of my recipes are, and is suitable for the whole family, including really little ones if you puree it up and cut out the salt (and as long as the chickpeas aren't too heavy for them to digest). Lush. And if you do it really well, and open up the foil parcels without spilling any juice, then you'll be able to reduce your washing up time right down. Everyone's a winner.

Salmon, Chickpea and Veg Parcels
Recipe - serves 2

2 salmon fillets
1/2 lemon, cut into 2 wedges
4 heaped tablespoons chickpeas
1 large handful asparagus
1 large handful tenderstem broccoli
1/4 teaspoon dried basil
Salt and pepper to taste (optional)
4 small knobs butter

Method

Pre-heat oven to 200 degrees C. L

ine a baking tray with two sheets of foil large enough to take half of the ingredients above and be wrapped up.

Split the ingredients above in half, and distribute evenly onto each of the foil sheets in the order as follows: asparagus, broccoli, salmon, chickpeas, lemon, salt, pepper, basil, butter.

Bake for 20-25 minutes on the middle shelf, open up and serve. So blinking easy. So blinking tasty.
