Yalancı Dolma (Herb, Tomato & Rice Stuffed Vine Leaves)

Friday night dolma and chips (with salad and yoğurt). Today I softened the finely onions in sunflower oil for 15-20 mins on a low heat before adding them to the rest of the ingredients before rolling the dolma (my mum often does this). Perfect Friday night supper. Ingredients for my yalancı dolma (using vine leaves but you can use the filling to stuff bell peppers, courgettes, aubergines too) filling below, method on my Instagram highlights

INGREDIENTS

2 large finely chopped brown onions 
2 tbsp sunflower oil
300g washed and drained white rice 
120ml olive oil 
100ml lemon juice
1 can chopped tomatoes 
3 heaped tbsp tomato purée 
3 tbsp dried mint
3 tbsp finely chopped fresh parsley
1 tsp salt
1/2 tsp black pepper
