Kıymalı Lima Fasulye (Beef Mince & Butter Bean Stew). I teased you with this one last week, and after being hounded for the recipe by so many of you, here it finally is. Easy as you like, if you’re stuck for what to cook tonight or this weekend, then this may be it. I’ll put the method up on my stories. I’ve got friends over later so I’m putting together a grazing board, and I can’t wait to share it with you. Hope the sun keeps shining today, have a lovely Friday all. 

INGREDIENTS

1 large onion, finely chopped
Few sprigs thyme
3 cloves garlic, finely chopped
1 tsp cumin
1 tsp smoked paprika
1 tsp paprika
1 tsp oregano
500g beef mince 
1 tsp dried parsley / 1 tbsp fresh parsley
3/4 tsp salt
3/4 tsp black pepper 
1 heaped tbsp red pepper paste
1 heaped tbsp tomato paste 
1 large carrot peeled and cut into 1 cm rounds
1 courgette cut into 1 rounds
2 cans washed and drained butter beans
500ml chicken or veg stock (1 stock cube dissolved in boiling water)

METHOD

Place a large pan on a medium heat, add the oil, and when hot, add the thyme and onion, and soften the onion for 8-10 mins until translucent and caramelised. Add the garlic, then the spices and stir well before adding the meat and browning. Once browned after 5-10 mins, add the pastes, stir well, then the carrots, dried herbs, salt and pepper, stir again, then add the courgettes before adding the beans, then the stock and bringing to the boil before turning the heat down to low-medium and simmering with the lid on for 30-40 mins until everything is reduced and luscious. Serve with my #melizcooksrice recipe. Perfect.
