Mini Lahmacun Pinwheels


Okay, this recipe is part of “Simple Twists” series on Instagram where I take some of my most popular recipes, or some really traditional ones, and give them a proper “Meliz’s Cooks” twist. These Cheats’ Mini Lahmacun Pinwheels were first created by me and posted on Instagram a while ago and have been very popular ever since (I have seen many remakes of my original idea)  - they are a finger-good party version of my ever-popular Lahmacun recipe in my blog, and are a quick and easy treat for your parties over the festive season. Ingredients


1 small onion, peeled, roughly chopped

1 kapya biber / red romano or small red bell pepper, deseeded, roughly chopped

1 green çarliston (charleston) pepper or small 

green bell pepper, deseeded, roughly chopped

25g fresh flat leaf parsley, roughly chopped

2 large garlic cloves

200g lamb or beef mince

1 very large, ripe tomatoes, halved, fresh grated, skins discarded

1 tsp ground cumin

1 tsp paprika

2 tbsp tatlı biber salçası (Turkish

sweet (mild) red pepper paste)

1 tbsp olive oil

3/4 tsp fine sea salt

1/2 tsp coarse black pepper

1 x 320g puff pastry


For the salad:

1 Red onion, peeled and very finely sliced

25g (1oz) fresh flat leaf parsley

leaves, roughly chopped

1 tbsp sumac

1 tbsp extra virgin olive oil

1/4 tsp sea salt flakes

Method: 


Preheat oven to 180c fan / 200c. Line a large shallow baking sheet with greaseproof paper. 


In a food processor, blitz together the onion, peppers, parsley and garlic until finely chopped and add it to a large bowl along with all the other topping ingredients, other than the pastry. Mix really well. 


Open out the pastry, so the longest side is facing you, spread the topping mixture all over, then roll the pastry away from you. Cut into 14 equal sized pinwheels, then turn them over so that the wheel shape is facing upwards, and press down gently with your hands to flatten them. Place them on the lined baking sheet and bake for 15-20 minutes until golden brown and crispy. 


Mix together the salad ingredients and top the lahmacun pinwheels with the salad and a generous squeeze of lemon juice to serve.
